Fluffy Spelt Rolls (Wheat Free)

These spelt rolls, made completely without wheat, are incredibly fluffy and taste absolutely divine! Plus, they’re really easy to bake. They are the perfect healthier bread rolls for breakfast or sandwiches.

Wheat-Free Fluffy Bread Rolls

I originally created the recipe for these amazing, fluffy spelt rolls when I was trying the Low FODMAP diet, and had to cut all wheat from my diet. These delicious bread rolls are made with spelt flour and completely wheat-free. Although the diet didn’t work out for me, I still bake these delicious spelt rolls regularly. They have become a staple at our house, not because they’re wheat-free—but simply because they are incredibly tasty!

But wait a minute, what is spelt flour?

Spelt flour is a type of whole grain flour that comes from an ancient variety of wheat called spelt. Unlike modern wheat, spelt has a slightly nutty flavor, making it a great choice for baked goods. It contains a different balance of gluten compared to regular wheat, which gives it a unique texture and often makes it easier to digest.

Dietary Benefits of Spelt

Spelt flour is often considered a bit of a healthier alternative to regular wheat flour, mainly because it has more protein and fiber. It’s also known for being easier to digest for some people (e.g. people following the FODMAP diet). One cool thing about spelt is that it has a slightly lower glycemic index than wheat, which means it can help keep your energy levels more steady. Plus, spelt flour has a slightly nutty, earthy flavor, which adds a lovely twist to recipes like bread, cakes, and pancakes! However, it is important to note that spelt still contains gluten and is not suitable for a gluten-free diet.

Tips for Baking Fluffy Spelt Rolls

  • Spelt flour doesn’t contain as much gluten as wheat flour, so the dough doesn’t need to be kneaded as long. That said, you can definitely use a stand mixer with a dough hook to knead the dough, but it’s also quick and easy to do it by hand.
  • When shaping the rolls, place them close together in a baking pan lined with parchment paper. This way, they’ll rise and bake to a uniform size.
  • After baking, brush the rolls with butter. Spelt flour absorbs moisture, and this gives the rolls a wonderful flavor and a lovely shine.
  • Feel free to sprinkle a bit of oats or sesame seeds on top if you like.

Shaping Your Spelt Rolls

You can shape your spelt rolls however you prefer, but I like to roll the dough into evenly sized balls and place them in a baking pan lined with parchment paper. As they rise, the rolls will fill the pan and bake close together, giving them a great height and a nice, uniform look.

These fluffy spelt rolls can be frozen for up to 3 months. Just place them in an airtight freezer bag once they’ve cooled.

Fluffy Spelt Rolls (Wheat-Free)

These delicious fluffy spelt rolls are perfect for breakfast, sandwiches or dinner. Made with spelt flour with numerous health benefits and a lovely flavor.

Ingredients

  • 250 ml lukewarm water
  • 17 g dry active yeast*
  • 75 g melted butter (cooled)
  • 1 tbsp sugar
  • 1 egg
  • 1 ½ tsp salt
  • 800 g sifted spelt flour
  • 15 g butter (for brushing)
  • Oats or sesame seeds (optional)

Instructions

  • Pour water into a bowl and dissolve the yeast in it for 5 minutes. Add the cooled melted butter, sugar, egg, and salt.
    250 ml lukewarm water, 17 g dry active yeast*, 75 g melted butter, 1 tbsp sugar, 1 egg, 1 ½ tsp salt
  • Gradually knead in the spelt flour until you get a smooth and elastic dough—the best and fluffiest result is achieved by using a stand mixer.
    800 g sifted spelt flour
  • Let the dough rise for at least 30 minutes.
  • Preheat your oven to 200 °C (392 °F). Shape the dough into small balls and place them side by side in an ovenproof dish or baking pax approx. 18x28 cm (7x11 inches) lined with parchment paper. Let the rolls rise for another 15 minutes.
  • Bake the rolls for 15-17 minutes until the tops are golden. Remove from the oven, brush with a little melted butter, and optionally sprinkle with oats or sesame seeds.

Notes

*17 g dry active yeast can be substituted with 50 g fresh yeast.
Freezing: These bread rolls freeze well for up to 3 months.
