These delicious fluffy spelt rolls are perfect for breakfast, sandwiches or dinner. Made with spelt flour with numerous health benefits and a lovely flavor.
Pour water into a bowl and dissolve the yeast in it for 5 minutes. Add the cooled melted butter, sugar, egg, and salt.
250 ml lukewarm water, 17 g dry active yeast*, 75 g melted butter, 1 tbsp sugar, 1 egg, 1 ½ tsp salt
Gradually knead in the spelt flour until you get a smooth and elastic dough—the best and fluffiest result is achieved by using a stand mixer.
800 g sifted spelt flour
Let the dough rise for at least 30 minutes.
Preheat your oven to 200 °C (392 °F). Shape the dough into small balls and place them side by side in an ovenproof dish or baking pax approx. 18x28 cm (7x11 inches) lined with parchment paper. Let the rolls rise for another 15 minutes.
Bake the rolls for 15-17 minutes until the tops are golden. Remove from the oven, brush with a little melted butter, and optionally sprinkle with oats or sesame seeds.

Notes
*17 g dry active yeast can be substituted with 50 g fresh yeast.Freezing: These bread rolls freeze well for up to 3 months.
