Blinis With Salmon and Avocado Cream

Blinis are a big hit for dinner parties or festive occasions. These delicious bite-sized buckwheat pancakes with savory toppings not only taste amazing, but also have the most inviting and festive appearance. Here’s my recipe for homemade blinis with salmon, avocado cream, and dill.

Delicious & Classic Blinis Recipe

If you have a soft spot for bite-sized food, you will love these delicious blinis with smoked salmon and avocado cream! Blinis are incredibly delicious because of their light, fluffy texture and slightly tangy, buttery flavor, thanks to the combination of buckwheat flour and baking powder. They are the perfect base for savory toppings, perfect as appetizers, for brunch, or just a fun snack!

Blinis are easy to make and the great thing is they can be prepared well in advance and frozen, so all you need to do before serving is to add the toppings. This makes blinis a popular appetizer when feeding a crowd. Further down the page, you’ll find my recipe for blinis, which I’ve developed to achieve perfect small, flat blinis with perfect texture and flavor.

What are blinis?

Blinis are small, bite-size pancakes made with buckwheat flour. They’re often served as appetizers with toppings like caviar, smoked fish or fresh herbs.

Ideas for Blinis Toppings

Besides being delicious, I love blinis because they’re so versatile. There are endless topping options—the only limit is your imagination! The classic combination is caviar, crème fraîche and a bit of dill, but they also pair well with:

  • Smoked salmon, avocado, and dill (see the recipe below)
  • Salmon and crème fraîche with honey
  • Lumpfish roe, red onion, and crème fraîche
  • Pesto, prosciutto, and goat cheese
  • Garlic sautéed mushrooms and hummus
  • Prosciutto and pesto cream

How to Make Blinis From Scratch

Blinis are simple to make. You just mix a basic pancake batter (see the recipe further down the page) and cook them in butter. If you want to ensure uniform blinis, you can use a special blinis pan–or you can eyeball it on a regular pan, which is quite easy.

When it comes to the size of your blinis, remember the goal is small and bite-sized! Think golf ball rather than tennis ball when baking them–one tablespoon of batter makes a perfectly sized little round blini. Fry your blinis over medium-high heat in butter and flip them to cook beautifully on both sides.

How do I know when it’s time to flip my blinis?

When you see bubbles on the surface, it’s time to flip them! This is a sign that they are nearly cooked through.

Blinis With Salmon and Avocado Cream

Classic buckwheat blinis—perfect for a festive, colorful appetizer! You can mix and match toppings (see ideas above), or serve them with smoked salmon, avocado cream, and dill like I do.

Udstyr

  • Blini pan (or regular skillet)

Ingredients

  • 1 dl buckwheat flour
  • dl all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 20 g butter
  • 1 egg
  • 2 dl milk
  • Butter for cooking

Toppings:

  • 2 ripe avocados
  • ½ lemon (juice only)
  • Salt
  • 1 tbsp crème fraîche or plain yogurt (optional)
  • 100 g smoked salmon
  • Fresh dill for garnish

Instructions

  • In a bowl, whisk together buckwheat flour, all-purpose flour, baking powder, and salt.
    1 dl buckwheat flour, 1½ dl all-purpose flour, ½ tsp baking powder, ½ tsp salt
  • Melt the butter and let it cool slightly. In another bowl, mix the melted butter with the egg and milk. Stir the wet ingredients into the dry ingredients until combined.
    20 g butter, 1 egg, 2 dl milk
  • Heat a blini pan or regular skillet over medium-high heat and melt a little butter. If using a regular skillet, use about 1 tablespoon of batter per blini. Cook until bubbles start to form on the surface, then flip and cook for another minute. Transfer to a plate to cool.

  • Mash the avocados with lemon juice and salt until smooth. Stir in crème fraîche or yogurt if using. Spoon about 1 teaspoon of avocado cream onto each blini.
    2 ripe avocados, ½ lemon, Salt, 1 tbsp crème fraîche or plain yogurt
  • Cut the smoked salmon into small pieces and place a piece on each blini. Garnish with fresh dill and serve immediately.
    100 g smoked salmon, Fresh dill for garnish

Notes

Freezing: The blinis can be frozen without toppings for up to 3 months.
