Need to whip up a quick treat for unexpected guests? No problem! These are some of the best, quick and delicious muffins you can imagine. Did I mention they’re irresistibly moist with the most delicious cinnamon sugar topping?

These cinnamon muffins are one of my favorite muffins recipes because they’re so easy to make and taste absolutely amazing. I’m a huge fan of cinnamon, and when it’s combined with a moist, light muffin, it’s the perfect treat for me! Plus, I’ve yet to meet anyone who didn’t love these cinnamon muffins.

How to Bake Quick Cinnamon Muffins

These cinnamon muffins have been a family staple for as long as I can remember. Whenever a sugar craving hit, these muffins were always a quick and delicious solution. They’re incredibly easy to make and everyone can join in. I’ve baked them countless times, even as a child.

Here’s how to bake them:

  1. Whisk the wet ingredients: Start by whisking together the eggs and sugar until they’re light and fluffy. This will help create the perfect muffin texture.
  2. Mix the dry ingredients: In a separate bowl, mix the flour, baking powder, and a pinch of salt. Sifting them helps the muffins rise evenly.
  3. Combine wet and dry ingredients: Slowly sift the dry ingredients into the wet mixture and fold them in gently. Be careful not to overmix – we want these muffins to be light and fluffy.
  4. Add the butter: Stir in the melted butter until the batter is well combined.
  5. Fill the muffin tin: Divide the batter evenly into the muffin cups in a muffin tin. I like to fill them about ¾ of the way full for that perfect rise.
  6. Top with cinnamon sugar: Brush the tops of the muffins with a little melted butter and sprinkle with cinnamon sugar for that irresistible, golden topping.
  7. Bake to perfection: Bake at 200°C (400°F) for about 12 minutes, or until they’re golden brown and a toothpick comes out clean.

These wonderfully fluffy cinnamon muffins are ready in a flash and so easy that anyone can join in!

Ingredients

Cinnamon Muffins:

  • 75 g butter
  • 2 eggs
  • 1 ½ dl sugar
  • 2 dl flour
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • ¾ dl water

Cinnamon Sugar Topping:

  • 2 tbsp butter
  • ½ dl sugar
  • Ground cinnamon to taste

Instructions

  • Preheat your oven to 200 °C (392 °F) and melt the butter.
    75 g butter
  • In a bowl, whisk the eggs and sugar until light and fluffy, either by hand or using a stand mixer.
    2 eggs, 1 ½ dl sugar
  • In another bowl, mix the flour, baking powder, and cinnamon, then sift this into the egg mixture. Stir in the melted butter and water.
    2 dl flour, 1 tsp baking powder, 1 tbsp ground cinnamon, ¾ dl water
  • Spoon the batter into muffin tins, filling the cups nearly to the top.
  • For the topping, melt the butter and mix the sugar and cinnamon to create cinnamon sugar. Brush each muffin with melted butter and sprinkle with the cinnamon sugar to taste.
    2 tbsp butter, ½ dl sugar, Ground cinnamon to taste
  • Bake the muffins at 200 °C (392 °F) for about 12 minutes. They’re done when a toothpick inserted into the center comes out clean.
