The delicious chicken meatballs (or patties) are so delicious and a huge family favorite. A traditional Danish meal that pairs great with potatoes or salad.
Peel and grate carrot and zucchini, then mix them into the bowl along with chopped parsley, milk, salt, and pepper. Stir until the mixture is well combined. If you have time, let the mixture rest for 30 minutes before frying for the best result. If not, fry them straight away.
1 large carrot, 50 g zucchini, 1 tbsp freshly chopped parsley, 3/4 dl milk, Salt and pepper
Heat a mix of butter and oil in a large skillet over medium-high heat. Form patties using 1 tablespoon of the mixture for each and fry them on both sides until they develop a golden crust and are fully cooked (about 4–6 minutes per side).

*1 portion of this recipe makes approx. 20 meatballs for 6 people for dinner. Freezing: These chicken patties freeze well. Freeze in an airtight container or freezer bag for up to 3 months.
