Cupcakes are easy to bake. You just have to watch for a few basic things to ensure moist, fluffy, delicious results.

  • Use room-temperature ingredients. This helps create a smooth batter and ensures even baking.
  • Don’t overmix the batter. Overmixing can result in dense, tough cupcakes instead of light and fluffy ones.
  • Fill liners two-thirds unless otherwise stated in the recipe. For evenly baked cupcakes, fill liners about two-thirds full.
  • Test to check when they’re done. Insert a toothpick in the center of a cupcake. If it comes out clean, they’re ready.
  • Cool completely before frosting. Frosting will meld and collapse if the cupcakes are warm.

How to Freeze Cupcakes

Cupcakes freeze beautifully, making them a great make-ahead dessert.

  • To freeze unfrosted cupcakes let them cool completely, then put them in a plastic ziplock bag or airtight container and freeze for up to 3 months. You can also wrap them individually i plastic wrap to be able to thaw them individually.
  • To freeze frosted cupcakes always check that your frosting is freezer-friendly first. Place the frosted cupcakes on a piece of parchment paper in the freezer until the frosting hardens, then wrap them carefully in plastic wrap and store in an airtight container.
